The cuisine in Chapada dos Veadeiros has a distinct flavour because of the pequi, a fruit which is about as big as a navel orange. The bright yellow pulp of the fruit is used to impart flavour to an assortment of dishes. It is used especially in the chicken-and-rice that is served along with grilled surubim na telha, a freshwater fish. December to April is the pequi season, and cooks preserve the abundant harvest to use the preserved fruit in rice dishes all through the year.
Some of the other delicacies in Chapada dos Veadeiros that you must taste are: peixe na telha, a kind of fresh water fish that is grilled/cooked on a clay tile; empadão goiano, a pie cooked with beef and chicken; and, guariroba rice, which is cooked with the pulp of the bitter fruit.
